At our state-of-the-art winery, dedicated exclusively to Georges de Latour Private Reserve Cabernet Sauvignon, we hand sorted the destemmed berries to retain only the highest quality fruit. Winemaker Jeffrey Stambor then fermented 45 percent of the grapes in new French oak barrels for early integration of fruit and oak character and to enhance the dense, rich texture. The balance of the must was fermented in stainless steel and wood tanks. Following judicious extended skin contact and in-barrel malolactic fermentation, the wine was pressed and returned to barrels for aging. A small amount of Petit Verdot was blended the Cabernet Sauvignon to further enhance the wine’s aroma and flavor spectrum.
The superb 2013 vintage gave the 2013 Georges de Latour Private Reserve Cabernet Sauvignon its unctuous fruit character and dense structure. Hugely complex, the wine reveals a broad spectrum of briary blackberry, black cherry and currant notes, with nuances of violet and bittersweet chocolate. Muscular tannins support the plush, expansive palate, while impeccably balanced acidity adds vibrancy. Integrated caramel and toasted oak spices, from aging in new French oak barrels, heighten the aromas and linger on the finish. To enjoy this wine at its full potential, we recommend at least five years of bottle aging; however if you can’t wait, decant before serving.
